A cross between a muffin and a doughnut! This mixture makes 6-8.
125 ml milk
85 ml vegetable oil
1 large egg
1/2tsp vanilla extract
200g SR Flour
100g C sugar
Jam
75g butter
100g granulated sugar
Preheat oven to 190 c and put cupcake cases in tin. Mix together oil, milk, egg and vanilla. Fold in flour and caster sugar to combine but don’t overmix, a lumpy batter is fine. Spoon mixture into cupcake cases to 1/3 full then add half a teaspoon of jam and top with more batter to almost fill each case.
bake for 20 minutes until springy. Just before taking out of the oven, melt the butter.
As soon as the duffins come out of the oven, dip the top in butter then granulated sugar. Eat warm!
*I actually overfilled my cases and should have made 8 instead of 6 so they overflowed a little! Lesson learned!
