500g Plain Flour (sifted)
Cream the butter and sugar together then add the eggs and combine. Mix in the flour and form a ball of dough. Split the dough into three balls and wrap each in clingfilm. Chill the dough balls in the fridge for half an hour. Roll out each ball of dough to about 5mm thick and cut shapes as required. I chose to emboss some of my cookies with a message. Put cookies onto parchment paper on a tray and chill for another half an hour. Meanwhile heat the oven to 150 c. Bake cookies for 10-12 mins until golden.
Top tip, you might want to use a smoother to lightly press each cookie down whilst hot so that you have a perfectly flat surface for icing. Leave to cool on the tray for a few minutes before transferring to a wire cooling rack.
You might want to ice these or coat in melted chocolate or sprinkle with icing sugar.
